Mexican food is wonderful and versatile. It’s also easy to make ahead of time so you can make up a few different types of meat to enjoy in various ways. So if Monday you are having enchiladas and Tuesday tacos then Wednesday quesadillas you can pick which meat you want to have any of those stuffed with or of course mix it up and have tacos 3 ways.
